Poiré Authentique - 2023

The "Poire Authentique" sparkling pear wine offers a perfect balance between sweetness and acidity, is refreshing, fruity and delicately sparkling. It successfully accompanies goat's cheese, blue cheese and seafood, but is also ideal as an aperitif! Over 14 varieties of pear are used. Depending on ripeness and variety, the fruit is selectively harvested by hand from September to December, stored dry for 3 to 5 weeks, crushed, briefly macerated and gently pressed. Spontaneous fermentation begins in wooden vats or concrete tanks and ends after racking in the bottle, without the addition of sugar.
